Ingredient List
Well, obviously, you are going to use tasty ice cream!
Vanilla ice cream to be exact. (Although if you want to go rogue with flavor, go for it!
You will also need the following for the ice cream ball coating:
- 1 cup graham cracker crumbs
- 1/4 cup chunky peanut butter
- 2 Tbsp. sugar
- 1/4 tsp. cinnamon
- 1/4 cup peanuts or mixed nuts, chopped
- 1 quart vanilla ice cream
And last, you will need these items for the hot fudge sauce:
- 1/2 cup butter
- 4 oz. unsweetened chocolate
- 3 cups sugar
- 1/2 tsp. salt
- 1 cup evaporated milk
- 1 tsp. pure vanilla extract
Making Crunchy Ice Cream Balls
Once you have crushed your graham cracker crumbs, combine them with the peanut butter, chopped nuts, cinnamon, and sugar.
Take a scoop of the vanilla ice cream and drop it into the cracker crumb mixture.
To get a round ball shape, I quickly shaped each ball with my hands. This also helped to press the crumb mixture onto the ball.
You want to work quickly so the ice cream doesn’t melt!
Place the ice cream balls onto a baking sheet lined with parchment paper and pop them into the freezer for a couple of hours.
How to Make Homemade Hot Fudge Sauce
In the meantime, melt the chocolate and butter in a pan using medium-low heat.
Add the rest of the ingredients except the vanilla and cook until the sugar has dissolved and the mixture thickens and starts to bubble.
Finally, stir in the vanilla extract.
The sauce will continue to thicken as it cools.
Drizzle the warm sauce generously over the crunchy ice cream, letting it cascade down the sides.
Grab a spoon and savor the delightful contrast between the creamy, cool center and the crunchy surprise of the coating.

Cinnamon Peanut Butter Ice Cream Balls with Hot Fudge Sauce
Equipment
- 1 Mixing bowl
- 1 food processor
- 1 rubber spatula
- 1 medium saucepan
Ingredients
- 1 cup graham cracker crumbs
- 1/4 cup chunky style peanut butter
- 1/4 cup peanuts or mixed nuts, chopped
- 2 tbsp. sugar
- 1/4 tsp. cinnamon
- 1 quart vanilla ice cream
Hot Fudge Sauce
- 1/2 cup butter
- 4 oz. unsweetened chocolate
- 3 cups sugar
- 1/2 tsp. salt
- 1 cup evaporated milk
- 1 tsp. pure vanilla extract
Instructions
- Blend the graham cracker crumbs, peanut butter, nuts, sugar, and cinnamon in a food processor.
- Scoop the ice cream into a ball and roll in the crumb mixture until well coated.
- Place in the freezer for two hours.
- Melt the butter and chocolate in a saucepan over medium-low heat.
- Add the sugar, salt, and milk.
- Cook until the sugar is dissolved and the mixture thickens.
- Stir in the vanilla. The sauce will continue to thicken as it cools.
- To serve, place 2-3 ice cream balls in a small bowl (or martini glass!) and pour the hot fudge sauce over the top. Enjoy!
