20 oz. fresh or frozen tortellini pasta cheese or beef 5 eggs 1 1/2 cups flour 5 tbsp. milk 3 cups bread crumbs regular, not panko 1 cup Parmesan cheese grated 2 tsp. Italian seasoning 1 tsp. red pepper flakes optional kosher salt to taste freshly ground pepper to taste fresh parsley for garnish 1 jar marinara sauce or pizza sauce
Cook the tortellini pasta according to the package directions and drain.
Preheat the oven to 375 degrees. Line a baking sheet with parchment paper.
Fill one shallow bowl with flour.
In the second shallow bowl, whisk together 5 eggs and milk.
Fill a third shallow bowl with the bread crumbs, Parmesan cheese, and spices. Mix thoroughly.
Place 4-6 tortellini in the bowl with flour and coat each thoroughly.
Transfer those tortellini to the second bowl and drench each noodle in the egg mixture.
Last, move the tortellini to the third bowl and coat the egg-covered tortelllini with the bread crumb/cheese mixture.
Place each tortellini on the baking sheet with space in between each one.
Bake for 15-17 minutes or until crispy and golden brown.
Arrange the baked tortellini on a serving tray with a bowl of marinara sauce for dipping. Garnish with parsley.
